(Capsicum annuum) The Anaheim is a mild variety of chili pepper with countless uses, especially in many Mexican and New Mexican dishes. The name “Anaheim” derives from Emilio Ortega, a farmer who brought the seeds to the Anaheim, California, area in the early 1900s. They are also called California chili or Magdalena, and dried as chile seco del norte. A highly prolific bearer of 6” long, thin peppers that are excellent for roasting, stuffing, or adding to sauces.
