This refreshing plant is very popular in the hot climates of Taiwan and Southern China and is delicious in stir-fries, salads, and soups. Planting: In the Spring, plant Sword Choy after all danger of frost has passed. Plant seeds 1/4-1/2 inch deep in raised beds 1 inch apart within the row, then thin to 8 inches apart when plants gro about 2-4 inches tall. Space the rows about 2-3 feet apart if growing with other plants. Planting in moist soil is best for seeds to germinate and emerge quickly. Planting Depth: 1/4 inch Within-Row Spacing: 1 inch, thin to 8-12 inches Between-Row Spacing: 24-36 inches Care During the Season: Watering: Water the plants about once a week in dry weather. Weeding: When hoeing and pulling weeds, try not to dig too deep to prevent the plant’s roots from damage. Fertilizing: Sword Choy does not usually need fertilizer. Insecticides: Insecticides may be used to protect plants. Bt-based insecticides and sulfur are organic options. Sulfur also has fungicidal properties and helps in controlling many diseases. Before using a pesticide, read the label and always follow cautions, warnings and directions. Diseases: Diseases may be a possibility during cool, wet weather. If spots appear on leaves or bean pods, treat the plant with an approved fungicide. Neem oil, sulfur, and other fungicides may be used. Harvesting: Sword choy is usually harvested when the stem is 10 inches tall but the plant can be harvested at any stage of growth. Store by wrapping the Sword Choy in a dry paper towel and place it in a plastic bag or storage container then store in the crisper drawer of the refrigerator.
